Ingredients:
4 medium apples cored
1 tsp lemon juice
1 tsp EVOO U (extra virgin olive oil)
1 cup unsweetened apple juice
1 tsp vanilla
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 cup chopped walnuts
Directions:
Pre-heat oven to 325 degrees. Place the 4 cored
apples in a greased baking pan. Brush with lemon juice and
set aside until oven reaches temperature. Cook until apples
are soft but still hold shape about 30 minutes.
In a small sauce pan heat apple juice, vanilla and spices. Bring
to a boil lower heat until sauce thickens.
Remove apples from the oven and cover with the thickened
sauce and sprinkle with chopped walnuts.
Serve hot.
